Quick dinner idea:
Auckland halal butcher’s in the Sandringham shops do a great spiced kebab mincemeat – perfect for something to go on a last-minute barbecue, or for a really quick dinner like this one below. Mold the kebab mix round stainless steel skewers and grill until golden and cooked through. Serve on a platter with greens, pickles, onion, herbs, tomato if in season, and thick natural yoghurt on the side. Roll everything up in flatbread. I bought naan from Khyber Foods, right nextdoor to the butcher.
I bought my wonderful kebab skewers in Istanbul’s Grand Bazaar. The end handles are made from copper, each shaped like a different animal. It was just after 9/11 and the airport security were not happy in the least about those skewers – even in my check-in luggage!
