Roast Vegetable Orzo

– Heat a generous amount of olive oil in a large roasting or baking dish under the grill and add summer vegetables such as: red pepper; courgette; red onion; mushroom; round or flat beans; vine tomatoes; aubergine – all roughly chopped. If using cherry tomatoes leave whole. Toss through the hot oil and drizzle over a few good splashes of balsamic vinegar.
– Grill until the vegetables are soft and starting to curl a little at the edges.
– Mix grilled veges through cooked orzo and add some cubes of feta and chopped basil, mixing through. Serve hot, warm or cold.
