What's for dinner?

It’s an everyday issue for me as dinner time creeps ever closer. But the problem lies not with having little or no inspiration, but rather in having too many options to choose from – and those who know me know I’m not a quick decision maker.

So … what to make for dinner tonight?

Things in the fridge needing to be used: Freedom Farms organic pork fillet, a bunch of coriander, spring onions, spinach, ginger, choi sum, firm tofu. Plenty of options when you add in various other ingredients from the pantry…

– stir-fried pork with spring onion, choi sum, garlic ginger, soy sauce, sesame oil and a bit of hoi sin

– a green curry with a homemade curry paste made using coriander, cashew nuts, fish sauce, tamarind, shallots, garlic, palm sugar, and green chilli

– khao pad moo (Thai fried rice with pork)

– something with a Mexican flavour – they love both pork and coriander

See – too many options … help me choose one, or suggest something not on the list.
